International school meals day 2015 - a blog post in english

Here it is, my yearly english blog post. I, together with my collegues, have been taking part in International school meals day for the last two years. My first year at a different school and last year in this one. I apologize in advance if there is any words in this post that is misspelled or if some things I write don´t make sense, this isn´t my native language since I´m born in Sweden. Some of you might have read my post last year and will recognice most of the things I´m writing but for those of you who didn´t I will start with some basic fact, both about the Swedish school meal system and about the restaurant that I manage.

In the Swedish school law it states that every lunch is to be served free of charge to students from pre-school up to high school. This is something that has been going on since 1945, in the middle of 2011 the government added an amendment to the law that stated the meal should alse be nutritional.

The standard of Swedish school meals are were high and many kitchens has a standard when it comes to there food that is equal to an normal restaurant. If we go back 10 years many of the kitchens served industrial preperd products and the focus wasn´t on the quality. But since then many things have happened and now the best schoolkitchens tend to do as much as they can from scratch.

I´m headchef of a school restaurant in the region of Stockholm, Swedens capitol. The school called Fribergaskolan (Fribergaschool) is for students from the age of 13 to 15, secondary school, and each day we prepare lunch for 500 students. We serve between two to three diffent meals every day. One maincourse, one soup and one vegetarian meal. We have a big buffé with about seven different sallads and we bake our on bread.

In the restaurant we are four people that work every day to make this possible, three of us fulltime and one that works during the lunchtime. We strive to make every lunch both nutritional and educational. Because we believe that the experience during the lunch should also be part of the students education. We serve dishes from our own culture but also from different cultures from around the world. The lunch should be an experience for all your senses. It should taste good, look good and smell good. And foremost it should give you enough energy to last the entire schoolday. Becouse if you don´t have the energy learning new things is so much harder. So the food we serve is the key to good education!



For us in Sweden it´s easy to forget the conditions for students in other countries. We are previliged to have a system that grants every student with the free meal during school days. A system that only exist in three countries around the world: Sweden, Finland and Estonia. Hopefully more countries will follow this system but in the meanwhile I hope that at least the students that can´t afford to buy there lunch should be offered some kind of meal during the day to give them enough energy to last through the school day. For many that could be the only meal they get, especially in poor countries with lot of poverty.

With that in mind the following discription of what we served our guests today might seem extravagant but since we have our system that has been establiced for so many years it´s possible for us to serve a meal that have restaurant standard. I as headchef has a calculated budget of 9.80:- Swedish crowns (ca 1,06 Euro or 1,2 USD) for each student per day that I can use to by groceries.

The meal we served today is a little bit extra just to celebrate the International school meal day but at the same time not that different from what we normaly serve.




For todays main dish we are serving owenbaked filet of rainbow trout with a roe- and herbsauce and steamboiled small potatoes. The rainbow trout is delivered to us fresh and is farmed in Åland, an island outside of Swedens coast. We make the sauce using sourcreme, creme fraiche, maionnaise, roe, dill, chives, lemonpeppar and salt.






The vegetarian dish this day was stuffed eggplant with a filling of tomatoes and lintels served with a tomatoesauce and steamboiled small potatoes.




Soup of the day was a Potatoe- and leeksoupe. The base for this soup is mashed potateos that was left over from yesterdays serving. A way to reduce waste and reuse leftovers. The soup is made of potatoes, milk, water, butter, leek, salt and peppar.




To complement these dishes we made our normal saladbuffé, containing at least seven different salads. To drink our guests can choose between organic milk or water. And we always serve bread and butter with every meal.

The meal we served today is a little bit extra just to celebrate the International school meal day but at the same time not that different from what we normaly serve.



For  todays main dish we have seasoned chicken drumsticks with a mix of dried herbspices (thyme, rosemary, tarragon, parsley and basil) and then let them marinat over night in cold storage. Today we carefully cooked them in the owen to keep them juicy. Then we made a creamy sauce using mixed fresh basil, organic creme fraiche, mayonniase and blackpepper. The chicken was served with an owenroasted potatoe made of small potatoes that we precooked and then roasted in the owen on high temperature with organic rapeseed oil and salt.






The vegetarian dish this day was an veggie beef made of couscous, sundried tomatoes, chives, garlic, roasted onions, eggs, salt, pepper and stuffed with cheese. The mixture was then formed to beefs and fried. They were then served with the same sauce and potatoes as the chicken.



Soup of the day was an Mexican soupe made from minced beef together with tomatoes and paprika, then seasoned with chili, garlic and ground cumin.



To complement these dishes we made our normal saladbuffé and baked a herb- and garlicbread. To drink our guests can choose between organic milk or water.

International school meals day 2013

Today’s blog post will be in English because we have celebrated the first "International school meals day". This post is my way of spreading what we do in our school restaurant to satisfy the children’s need for nutritional food to help them get through the school day. We believe that the school restaurant should be like any other lunch restaurant, serving good food in a nice atmosphere!

In Sweden, school lunches are free for all students in grade school. The school law states that every school meal should be free, nutritional, and that children with cultural, religious or medical needs are entitled to special meals. I work at, and manage a school restaurant where 510 children between the ages of 6 and 12 eat their lunch; we also have about 60 teachers and other staff members that eat our food every day. Teachers are furthermore allowed to eat for free if together with their pupils, the so called pedagogic meal. The purpose is to consider the meal times as a part of the education, teaching children to sit down and eat a proper meal, but also to learn proper conduct and how to interact with other persons in a dining situation.

Today was, as you are all aware of (or maybe you have missed it), celebrating the International school meals day. The idea comes from the UK and the USA where they try to raise awareness of the importance of a proper school meal. For students to be able to take part of, and get the most out of their education they need to eat a healthy and nutritional meal. Sadly, many countries around the world does not offer free school meals to all of their students in grade school. Sweden, Finland and Estonia are the only countries in the world with free school meals for every child. In other countries, meal programs for underprivileged children are in place, but not for every child that attend school. Working with school meals in Sweden, I feel proud of the system that we have created because I believe that there is a clear relationship between good, nutritious school meals and good grades.

Together with my colleagues we want to set a good example of the foods you can prepare and serve to school children. For lunch today we served "Grilled cutlet of pork with béarnaise crème and oven roasted small potatoes", and as always we have a big salad buffet with a variety of different salads. We also served a soup (as we do every day). Today it was a "Caribbean chicken soup with red curry and coconut milk". And for the vegetarians we have a separate meal, but this is also available for anyone who wants to taste it.
